Making ppeongtwigi (뻥튀기) also called Rice Crackers and Rice Cakes—the traditional Korean puffed grain snack—involves using special high-pressure puffing machines. This process rapidly expands grains like rice, corn, or wheat.

Choose the Grain:
Use rice, corn, barley, or other low-moisture grains. Sticky rice (glutinous rice) is often preferred in Korea.
Dry the Grains (if needed):
Grains must be dry enough (typically <14% moisture) for proper puffing.
Sweet Ppeongtwigi Variations
1.Honey Glazed Ppeongtwigi (꿀 뻥튀기)
Ingredients:
Puffed rice (or corn)
Honey (or rice syrup)
A pinch of salt
Instructions:
In a saucepan, warm up honey and a small amount of water (to thin it).
Toss in the ppeongtwigi and stir until evenly coated.
Let it cool on parchment paper so it doesn’t stick.
Sprinkle a tiny pinch of salt for balance.
Optional: Add crushed nuts or sesame seeds.
2.Caramel Ppeongtwigi Clusters
Ingredients:
Puffed rice
Sugar
Butter
Light corn syrup
Instructions:
Melt butter, sugar, and corn syrup together to make caramel.
Mix in puffed rice quickly.
Shape into balls or press into a tray and cut into bars.
Think of it as Korean caramel popcorn — crispy, sticky, and addictive!
3.Chocolate Drizzle Ppeongtwigi
Ingredients:
Puffed rice
Melted chocolate (dark or white)
Optional: Freeze-dried berries, coconut flakes
Instructions:
Lay puffed grains flat.
Drizzle melted chocolate over them.
Chill until chocolate hardens.
You can even make bark-style snack bars.
Savory Ppeongtwigi Variations
1.Seaweed & Salt Ppeongtwigi
Ingredients:
Puffed rice
Crushed roasted seaweed (gim)
Sea salt
Light oil mist (optional)
Instructions:
Toss puffed rice with crushed seaweed and a pinch of salt.
Spray lightly with oil to help seasonings stick (optional).
Tastes like a lighter version of seaweed popcorn.
2.Cheese Ppeongtwigi
Ingredients:
Puffed corn or rice
Cheese powder (or nutritional yeast for a vegan version)
Garlic powder
Paprika
Instructions:
Mix cheese powder and spices.
Toss with warm puffed grains while slightly moist or sprayed with oil.
Think of a Korean take on Cheetos, but airier!
3.Wasabi or Curry Flavor
Ingredients:
Puffed grains
Wasabi powder or curry powder
Salt
Oil mist
Instructions:
Lightly mist ppeongtwigi with oil.
Sprinkle with seasoning blend.
Shake in a paper bag or bowl to coat evenly.
